Colour and flavour
The colour varies from yellow to green, depending on the type of olive and the country of origin. The smell may be intense to fruity or even distinctly peppery.
Extra virgin olive oil has a distinct aroma, making it a precious product. Because of its delicate taste, this type of olive oil is best used cold, for instance in dressings and sauces. As its characteristic flavour is largely lost when heated for a longer time, it is better to use a cheaper olive oil for frying, roasting and deep-frying.
